Noble Sandwich Co. on Burnet Road

Known for crafting stellar sandwiches from mostly housemade ingredients, Noble Sandwich Co. has inspired many a reverse commute to its original trailer turned brick-and-mortar 620 location. Thus, after waiting for what seemed like eternity, fans (i.e., yours truly) of Noble Sandwich Co. rejoiced with the opening of the cult favorite’s Central Austin location last month.

A meat lover’s dream, Noble Sandwich Co. has garnered much of its notoriety from sandwiches featuring ingredients such as high-quality charcuterie like the Smoked Duck Pastrami as well as more ambitious options such as the Red Chili Braised Pork Cheek sandwich. On this visit, the restaurant’s namesake sandwich The Noble Pig won plenty of praise thanks to a pig three ways blend of spiced ham, pulled pork, and crispy bacon. Topped with melted provolone, mayo, and delicious whole grain mustard, it’s a gut check worth investing in.


Oyster Mushroom Rueben – $8


Vegetarians, pescetarians, or those folks merely trying to avoid a George Costanza-style nap need not worry; there are several lighter options that more than stand up to their heartier counterparts. The Oyster Mushroom Rueben, for example, would have pleased Kulakosky himself with its flavorful blend of grilled mushrooms, melted Swiss, tangy Rueben dressing and housemade sauerkraut. Served between two freshly baked slices of rye, it’s a winner of an order.

As for the sides, a crispy jalapeno slaw has just the right amount of heat and is delicious next to a hearty sandwich. Noble’s spin on classic potato salad includes chunky red potatoes mixed with a bold blend of fresh herbs. However, it’s the housemade TNP pickles that make the best sidekick around. In addition to sandwiches, other offerings include a daily pate, sandwich specials, and mouthwatering desserts such as cookies, tarts and brownies.

My inaugural visit to the new restaurant came only a few short days after it had opened, but one wouldn’t know it by the ease at which it was running. Despite its immediate popularity, Noble Sandwich Co. clearly grasps that as a breakfast and lunch spot, its Monday through Friday patrons are often are under a time crunch – something anyone who has been stuck at an overly long workday lunch can appreciate. Orders are taken at the counter, which means there will undoubtedly be a line, but it moves quickly. The new space, located next to Pinthouse Pizza on Burnet Road, has plenty of seating both in the open interior and back patio in addition to ample parking in the back.
